Explore the stories behind Pampanga’s iconic dishes and find out how food shaped the very fabric of the region’s society and culture. Join Chef Trisha in this class and discover the incredible ingenuity of the Kapampangans as exhibited in the origins of their delicately crafted local cuisines!
Pampanga's famous sisig is a testament to Filipino ingenuity. Instead of wasting throw-away pork cuts from the U.S. Air Base in Pampanga, the crafty Kapampangans came up with an ingenious dish that is now one of the most celebrated dishes in the Philippines: the sizzling sisig.
Food has always held a special place of reverence in the Filipino culture. As a people that love and honor food, regional cuisines have become a source of pride for the locals of the archipelagic nation. Among the country’s local cuisines, one stood out the most. Kapampangans are known for being meticulous when it comes to food, as evidenced in the practice of sangkutsa (precooking) and food preservation. In this course, you will discover what makes the cuisine of Pampanga so extraordinary that the province has historically been crowned the culinary capital of the Philippines.
